Zucchini Cheese Bread

2 cups flour
2 tsp. baking powder
1/2 tsp. baking soda
3/4 tsp. salt
1/8 tsp. cayenne
1/4 tsp. freshly ground pepper
1 Tbsp. sugar
2 tsp. fresh rosemary, chopped
2 tsp. fresh basil or oregano, chopped
2 Tbsp. green onion, chopped
1 cup shredded cheddar cheese
2 eggs
1/4 cup vegetable oil
1/2 cup milk
1 cup shredded zucchini
Grease and flour a 4" by 8" loaf tin
In a large bowl, combine first 11 ingredients.
In a medium bowl, lightly beat eggs. Add oil and milk and mix well. Stir in zucchini.
Add liquid ingredients to dry and stir only until dry ingredients are moist.
Pour into loaf tin and smooth top.
Bake at 350 degrees F for 40 to 45 minutes or until a toothpick inserted in the centre comes out clean.
Let loaf stand for 15 minutes before turning out of tin.
Cool on rack.
Makes 1 loaf
