Banana Bread

1/2 cup butter, softened
1 1/4 cup sugar
4 eggs
1 tsp. vanilla
2 2/3 cups all purpose flour
1/2 tsp. salt
1 Tbsp. baking powder
1/4 tsp. baking soda
2 cups mashed bananas (about 4 or 5)
1 cup chopped walnuts or pecans, optional
In a large mixing bowl, cream butter. Gradually beat in sugar until mixture is fluffy.
Beat in vanilla and eggs one at a time.
Sift together flour, salt, baking powder and baking soda.
Gently beat in dry ingredients alternating with mashed banana. Carefully fold in nuts.
Scrape batter into 2 greased and floured loaf pans (8 1/2" by 4 1/2").
Bake at 350 degrees F for 50 to 60 minutes.
Let cool for 10 minutes before removing from pan. Cool completely on cooling rack.
Makes 2 loaves
