Teresa's Experience with Barb's Rhubarb Ginger muffins

My mom filled my freezer with rhubarb earlier this summer and so I've made Barb's rhubarb ginger muffins several times - much to Robert's delight. He finds them addictive either fresh from the oven or a day old. We both love the ginger in them. Our new flexipan muffin tin is great for these muffins.
Since I have to experiment with recipes, I decided to double the amount of rhubarb (from 1 to 2 Cups) and loved the result. I also (accidentally) omitted the baking powder once. The result was a gooey muffin (which I liked) but I think they're probably better with the baking powder! Just in case you were thinking of trying it...
