East Van Farmers' Market 2000 Open

The East Vancouver Farmers' Market is in full swing again. In its
fifth year, the market is a great place to buy fresher than fresh local produce, locally
produced food, plants and art by local artisans.
The first weekend the market opened, we picked up some gorgeous ingredients for a
lively salad: organic arugula, portabellini mushrooms (small portabellos) and some
organic cheese from Moonstruck Organic Cheese.
I lightly brushed the mushrooms with olive oil and grilled them on the barbeque just until
tender. I then sliced them up and tossed them in a dressing of cherry balsamic vinegar,
extra virgin olive oil, salt and pepper. Just before serving, I tossed in the arugula and
topped each salad with a good crumbling of sheep’s milk cheese. Mmmm..
The following week I had to go back to the market to buy more arugula
while I waited for my garden supply to catch up. The East Van Farmers' Market
is definitely going to be part of my Saturday routine over the summer!
