Smoked Salmon Potato Cakes

Smoked salmon, fresh smoked or dry cured
Yellow onion
Mashed potatoes, freshly made or leftover
Pepper and salt to taste
Fresh herbs like dill or parsley, to taste
Oil for pan frying

Finely chop salmon. Mince onion.
Mix into mashed potatoes, combining very well. The potatoes should be quite plain to begin with (make sure they're not too moist from cooking water or milk).
Season with pepper, salt and herbs.
Form mixture into patties, larger ones for side or main course servings or small ones for appetizers.
Heat a non-stick pan over medium heat. Add 1 tsp. oil and swirl around pan.
Pan fry patties in batches, using more oil, until golden, about 4 minutes each side. Keep patties warm on a parchment lined baking sheet in 275 degree F oven.
Serve warm with lemon wedges or your favourite sauce.
