    Pasta with Zucchini

    1/2 pound cup pancetta (Italian bacon that you get from stores like La Grotta Del Formaggio); I prefer spicy pancetta but you can use normal pancetta. Do not use "pancetta sienna"!
    1/4 cup olive oil
    3 cloves garlic, chopped fine
    1 1/2 pounds zucchini, cut julienne or if you are lazy like me using your food processor, and well drained
    1/2 cup whipping cream
    1/2 cup freshly grated parmesan
    1 pound penne

    Start boiling the water for the pasta. Meanwhile, saute pancetta in a large frying pan until clear. Remove and set aside. When the pasta is done, drain. Add the olive oil to the frying pan, saute the garlic for a few seconds (you want the garlic to still be sweet). Add the zucchini and saute until the zucchini is hot but not mushy. Add the cream and stir.

    Toss cooked pasta with the above zucchini, garlic and cream mixture. Add pancetta, cheese and salt and pepper.

    This recipe was adopted from "The Frugal Gourmet Cooks Three Ancient Cuisines". The Frugal Gourmet, Jeff Smith, has been accused of child molesting and he settled out of court (which usually indicates guilt or an unwillingness to fight!). Here is a website for Jeff Smith and a website against Jeff Smith. Decide for yourself! I unfortunately lean towards guilt rather than innocence but only Jeff Smith and God will ever know! It's too bad! Either way his recipes were delicious and simple to prepare!
