Slice and Bake Shortbread

1 cup butter, room temperature
1 cup icing sugar, sifted
1 tsp. vanilla
2 cups flour
Cream together butter, icing sugar and vanilla until fluffy.
stir in flour and knead dough lightly until smooth.
Divide dough into two. Shape each piece into a roll about 1 1/2" to 2" in diameter.
Wrap in plastic wrap and refrigerate until firm. Dough may be frozen for up to one month.
Cut dough into 1/4" slices and place on ungreased cookie sheets.
Bake at 300 degrees F for 15 minutes until firm.
Makes about 4 dozen
This dough may also be used for rolling and cutting with cookie cutters.
