Lemon Ginger Cookies

2 cups flour
2 tsp. baking powder
2 1/2 tsp. ground ginger
1/2 tsp. ground cinnamon
1/4 tsp. salt
3/4 cup shortening
3/4 cup sugar
2 Tbsp. molasses
1 tsp. grated lemon rind
1 large egg
1/3 cup crystallised ginger, diced
Granulated sugar
Sift together dry ingredients.
Cream together shortening, sugar and molasses.
Beat in lemon rind and egg.
Add dry ingredients and combine well. Stir in chopped ginger.
Form dough into 1" balls. Roll in sugar and place on parchment lined cookie sheets, spacing them 3" apart.
Flatten slightly with bottom of a glass dipped in sugar.
Bake at 350 degrees F for 8 minutes for soft cookies or 10 minutes for crisp cookies.
