Ginger Shortbread

1 cup butter, room temperature
1 cup icing sugar, sifted
1 1/2 tsp. molasses
1 tsp. vanilla
2 cups flour
2 tsp. ground ginger
1/2 cup crystallized ginger, diced
Cream together butter, icing sugar, molasses and vanilla until fluffy.
Sift together flour and ground ginger. Stir into butter mixture. Stir in crystallized ginger.
Knead dough lightly until smooth.
Divide dough into two. Shape each piece into a roll about 1 1/2" to 2" in diameter.
Wrap in plastic wrap and refrigerate until firm. Dough may be frozen for up to one month.
Cut dough into 1/4" slices and place on ungreased cookie sheets.
Bake at 300 degrees F for 15 minutes until firm.
Makes about 4 dozen
