Ginger Scones

2 1/4 cups flour
1/3 cup sugar
3 tsp. baking powder
1/4 tsp. salt
1/2 cup cold butter, cut into small pieces
2/3 cup crystallized ginger, diced
2 eggs, beaten
1/2 cup milk
Raw or turbinado sugar, optional
Combine first 4 ingredients.
Cut in butter until mixture resembles coarse cornmeal. Stir in ginger.
Set aside 3 Tbsp. egg.
Add milk to remaining egg. Add liquid all at once to dry ingredients. Stir only until moistened. Knead about 10 times.
Divide dough into two. Pat each piece into a circle about 1/2" thick and cut each into 6 pieces.
Place wedges onto an ungreased baking sheet. Brush with remaining egg and sprinkle with raw sugar (optional).
Bake at 425 degrees F for 12 to 15 minutes.
Makes 12 scones
