Cinnamon Biscotti

1/4 cup butter
2/3 cup sugar
3 eggs
1 tsp. vanilla
2 1/2 cups flour
1 1/2 tsp. baking powder
1/4 tsp. salt
2 tsp. cinnamon
2/3 cup almonds or walnuts, chopped
1 egg white, optional
1 Tbsp. sugar, optional
1/4 tsp. cinnamon, optional
Cream together butter and sugar.
Beat in eggs one at a time. Beat in vanilla.
Sift together flour, baking powder, salt and cinnamon. Add to egg mixture and combine well. Stir in almonds or walnuts.
Form dough into two 12" by 2" loaves and place on lightly greased and floured baking sheets. Flatten to 3/4".
Optional: Mix 1 Tbsp. sugar and 1/4 tsp. cinnamon. Brush loaves with egg white and sprinkle with cinnamon sugar.
Bake at 325 degrees F for 30 minutes. Cool 20 minutes.
Using a serrated knife, cut loaves into 3/4" slices. Place on sides on baking sheets. Bake at 275 degrees F for 30 minutes until firm and dry.
