Chocolate Buttermilk Cake

2 cups flour
1 1/2 cups sugar
1 tsp. baking powder
1/2 cup butter
1 cup water
1/4 cup cocoa
1 tsp. instant espresso powder
2 large eggs
1/3 cup buttermilk
1 1/2 tsp. vanilla
Preheat oven to 375 degrees F. Butter bottom and sides of a 9" by 13" baking pan. Lightly flour.
Combine flour, sugar and baking powder in a large bowl.
In a medium saucepan, combine butter, water, cocoa and espresso powder. Bring to a boil.
Pour the cocoa mixture into the dry ingredients and whisk until combined. Add eggs, buttermilk and vanilla. Whisk until smooth.
Pour into baking pan. Bake 15 to 20 minutes or until toothpick inserted in centre comes out clean. Cool in pan for 10 minutes before removing. Cool on rack completely before icing or serving.
