1 1/4 cup flour
Stir together dry ingredients in a medium bowl. In another medium bowl, combine remaining ingredients well.
Makes about 9 - 4" pancakes
Oatmeal Pancakes: Reduce flour to 1 cup and add 1/3 cup rolled oats and 1/2 tsp. cinnamon to dry ingredients.
Blueberry Pancakes: Sprinkle fresh or frozen blueberries onto uncooked side of pancake just after pouring onto griddle.
Banana-nut Pancakes: Substitute 1/2 cup mashed ripe banana for 1/2 cup milk. Gently stir in 2 Tbsp. toasted, chopped walnuts.
