Amen! I have a kitchen scale that I got in Germany and I highly recommend all cooks have one! From RecipeGullet - The Kitchen Scale Manifesto.: QUOTE In modern home kitchens in Europe, a kitchen scale is standard equipment. In the US, one rarely sees them except in the kitchens of compulsive dieters and very serious amateur pastry chefs. Because most people in Europe have scales, recipes generally specify quantities of bulk dry ingredients as weights. For example, a cake recipe might require 250 grams of flour. In the US, the same recipe would most likely use cups, which measure volume, not weight. So why the difference, and does it really matter? Is weighing ingredients just a complicated, confusing, and unnecessary consequence of going metric? The answer is that it does really matter, and once you get the hang of it it's actually easier than using cup measures.

Rosle Garlic Press

Recomendo recommends the Rosle Garlic Press but I don't!I am sure that the Rosle Garlic Press is wonderful, but I no longer use a garlic press. I went through a long phase where I smashed garlic with a cleaver. Then, I got bored of smashing the garlic and used a Good Grips Garlic Press (which is wonderfully ergonomic but hard to clean). Finally after watching, an Alton Brown program on garlic on the Food Channel, I vaguely remember him dissing the flavour of garlic from a garlic press. Ever since, I have gone back to smashing it with my cleaver which is much more satisfying and the garlic definitely seems sweeter. What do you think?

Tyler Brûlé formerly of Wallpaper loves his Zyliss Chopper

According to the article, His Own Private Island, and a Simple Chopper, from the New York Times, hipster Tyler Brûlé, style maven and ex-editor of over the top Wallpaper magazine, loves his Zyliss Chopper.
BEGIN Quote
"The Swiss have a word for it — schnick-schnack," he said. The expression, it seems, refers to any needless embellishments. He explained: "When you just want something plain and basic, like when you want a good massage without all the ayurvedic nonsense, you say, I just want a massage, no schnick-schnack. The Zyliss chopper is totally that. It's an amazing piece of democratic design."

Greuzi Tyler! We love our Zyliss Chopper too!

The Microplane Grater Rocks!

I have to agree with the fine folks at Simmer Stock. The Microplane Grater rocks!
Barb has had one ever since I have known her. We have two box graters and various other grating kitchen gadgets. But the Microplane is the one that we turn to without thinking. It's the one I use for grating parmesan, romano and any other cheeses!
A fine, inexpensive MUST HAVE addition to any kitchen!

Zyliss Chopper Update

Robin emailed us to ask what we thought about the Zyliss Chopper we received for Christmas.
Well I am happy to report that the chopper has earned a place in our kitchen.
It's great for chopping fiddly things that tend to roll around like nuts. We use it for chopping peanuts for Padh Thai and for chopping hard boiled eggs for making egg salad sandwiches.
It's not an essential gadget because you can chop with an ordinary knife. However for messy tasks like chopping nuts or egg salad where precision shapes are not needed it works great!
