    Chicken with Green Olives and Preserved Lemon

    On the weekend we celebrated Kerrie's birthday with a homecooked Moroccan meal. One of our dishes was chicken with green olives and preserved lemon.

    We had to shop around a bit to find Moroccan preserved lemons and finally found some at Gourmet Warehouse. Although preserved lemon can be omitted from the recipe, it adds a very unique, slightly bitter-tart flavour to the dish that we loved.

    Margaret's latest Vancouver Italian Cooking Class

    Margaret is a friend who we met when she organized our cooking schools on our honeymoon.

    She's organizing a cooking class which promises to be just as great as the last one. Check it out! We would go ordinarily but with a baby on the way, Barb can't drink so we probably won't be there. I am sure it will be wonderful and well worth the money.

    Come and join me, "Mama" Margaret for a cooking class on Sunday, January 25 at 4:00 p.m. to ? at the North Vancouver home of Italian cooking teacher, Beatrice Carlani.

    Beatrice is bursting with gioia di vivere--joy of life...to put it mildly! She's a delightful lady, a real character and a great cook and hostess. She hails from Umbria and has lived in Canada since 1976. Now retired, she offers Italian cooking classes to an increasing number of ecstatic fans in her lovely home.

    Over espresso and chocolates, Beatrice and I took to each other like pasta to tomato sauce. Together we've planned a special Mama Margaret cooking class in her home consisting of...

    • cavatelli pasta with walnuts, gorgonzola and cream (or without the cheese if you wish)
    • cooked escarole with black olives (outside escarole leaves)
    • escarole salad with oranges (inside escarole leaves)
    • potato puree
    • Umbria style baron of beef in red wine
    • "false" chocolate mousse (extra good with Beatrice's secret!)
    • espresso

    These dishes are easy to make at home and are based on dishes Beatrice ate at her family's villa in the country near Gubbio in Umbria. Yummmmy!

    Wines are included. In her kitchen, sip your wine as you cook away, or simply sip your wine and cheer the cooks on!

    After the lesson, we all sit down at her elegantly dinner table and indulge in our creations. A wonderful Italian experience that will transport you back to Italy for a few hours!
