A few nights ago I wanted to use up some ripe bananas and didn't feel like using our recipes for banana oatmeal muffins or banana chip muffins. So I found this recipe for banana-nut bread on Epicurious.
I substituted butter for shortening and omited the pecans (because I didn't have any!!) and the loaf turned out moist and flavourful. I doubled the recipe and baked most of the batter in a long loaf pan. I threw in a handful of chocolate chips into the remaining batter and baked a tasty banana chocolate chip mini-loaf for chocoholic Roland.
